Sun-dried Tomato and Feta Stuffed Chicken Breast Recipe:

2 large chicken breasts
1/2 c flour
2 tsp salt
1 tsp black pepper
2 tbs olive oil

Filling:

3 oz feta cheese crumbles
2 oz mozzarella
2 oz sun-dried tomatoes (minced)
1 tsp dried oregano

Preheat oven to 400 degrees

In a bowl mix all of the filling ingredients until combined

Make a pocket in each chicken breast by making a small slit in the side of the breast and then working the knife around the inside of breast with out going through the other side

Stuff the chicken breasts with the filling and seal the holes by weaving and toothpick through the chicken

On a plate combine the flour, salt, and pepper

Dredge the breasts through the flower

Heat a pan over medium high heat with 2-3 tbs olive oil.

Place the chicken into the pan and brown the breast for about a minute or until golden brown

Flip the breasts and insert a oven thermometer set to 165 into the center of one of the breasts

Bake at 400 degrees until temperature is reached or about 15 minutes
