Ho provato a cucinare il Peposo dell’Impruneta. L’ho fatto con la spalla di capra, perché sono indiana e non mangio carne di manzo.

Questa era la mia prima volta!! L’ho servito con purè di patate perché non avevo pane🤭🤭

Sembra buono? If you have any suggerimenti per me, per favore dimmelo! Buona giornata 🌸

the thing with this kind of dish and others like crostini coi fegatini: the worse they look the better they are. in italian brutto ma buono

  2. Hi! Writing from Florence 🙂 It looks great for a first-timer! How did you like it? I think goat can be a bit gamey, but it should actually work really well here. Maybe you went a bit overboard with the crushed pepper, though, you only need a little more than you’d put in a regular stew; it’s really the whole peppercorns (and the garlic) that impart flavor without making it too spicy. If you roasted the peppercorns beforehand (Indian style), kudos to you!

Finally, mashed potatoes are definitely the way to go and a very common side dish here too. Peposo also works amazingly well with polenta. Plus, any leftovers can be reheated (maybe with a touch of tomato paste) to make a delicious pasta sauce.

Pro tip: Since I don’t love biting into whole peppercorns with every mouthful, I usually put them in a cheesecloth bag and remove them once the cooking is done.
