  1. Yes to all casseroles Mike!!! Quick and easy is the way to go. I just saw a video today talking about how more folks are cooking at home now due to the cost of tipping on top of the sky high food prices. Casseroles for the win!!!

  2. This gave me an idea. I rarely follow any recipe, but rather use them for inspiration. Your videos and website are full of them. I made something based on this with a Mexican twist. Peppers and onions seared and charred in a hot, dry pan, then moved to a bowl. Added the ground beef to the hot pan and caramelized like you did. Added garlic(no such thing as too much), the usual suspects of Mexican spices and herbs, deglazed with beef stock. Next in goes some crushed tomatoes and chopped cilantro. turned off the heat and sprinkled with some queso fresco. Earlier I had parboiled some diced russets, drained, coated in EVOO and tossed in some more queso fresco. Topped the beef mixture with this, sprinkled some more paprika, cumin etc, and drizzled a little EVOO on top. Baked at 375 for 20 minutes, then broiled for another 5.

    I love how your recipe even gives some suggestions on how to play with your original. I feel that once you get a few basics down and learn different flavor profiels, the kitchen becomes this blank canvas to express yourself. The main reason why I went into a slightly different direction is because I ran out of rice. Keep this good stuff coming, Mike.
