EXTON — The newly opened L’Olivo Trattoria restaurant, with a full bar, features authentic Italian flavor crafted with passion at the Eagleview Town Center.
Co-owners Nui and Francis Pascal named the eatery after the olive tree, a symbol of peace, longevity and friendship.
Francis was born in the South of France and grew up with an Italian mother and French father in Perugia, Italy, surrounded by olive trees.

Francis said the restaurant tries “to do things a little bit unusual and not so traditional” — a little bit American/Italian, with a tweak of French.
The Pascals have owned the Birchrunville Store Cafe for 26 years and the Butterscotch Pastry Shop across the street.
Executive Chef Jonathan Amann comes with a great reputation from Amani’s in Downingtown.
Chef Francis talked about watching the diners enjoy a meal.

“When I see the eyes popping up, it makes my day,” he said.
Nui enjoys working directly with the diners.
“I love making people happy,” she said. “They love the food.
“They love the service.”

Specialties include “love pillows” gnocchi di Patate and lasagna with wild mushroom truffles. Another favorite is Creste di Gallo, the crest of the “rooster,” a creme with ricotta and lemon zest. Or try Lamb Scottaditi, grilled Australian lamb rack, polenta fries and tomato salsa crudo.
Pasta runs from $24 to $35, and main dishes go from $32 to $48.
About 35 employees serve 105 seats inside, and 55 diners outside, with 45 seats at the bar.
General Manager Leslie Myers calls it “high-end Italian,” where it’s “best with family values that make you feel like you are at home.”
Leslie is married to Jonathan, which makes it a two-couple business. Both couples are committed to the craft and the establishment. She also said that the restaurant is welcoming and exciting.
