It’s Baby Back Ribs time, and I forgot how fast they cook! I’m used to smoking St. Louis style ribs and taking 6 hours. These Baby Backs took only 3.5 hours to smoke. I used 3 hickory and 2 Cherry chunks of wood for smoke.

I smoke three baby back ribs, with two of them my Memphis Style BBQ and one Honey BBQ. Both had a base layer rub of Mrs. Dash Garlic and Herb spice.

Put on my Kamado joe for 2 hours of smoke. Wrapped with brown sugar, butter, and honey for 1 hour, then set back on the smoker for thirty minutes or so with one more layer of rub.

I still like St. Louis style better, but the Baby Backs Ribs still turned out really nice.
