It’s the end of a two-day tasting marathon at the historic Seppeltsfield winery in the Barossa, and we’ve just sipped and swooned our way through more than 60 vintages of the winery’s legendary Para 100-Year-Old Tawny. It’s an intense, lusciously concentrated fortified wine that spends a century in barrel before being bottled and sold at an eye-wateringly high price.
