I keep it simple when lettuce is super fresh. A light dressing, a few fresh veggies if I have them, and homemade croutons.
Also, I bought a salad spinner and that was a game changer. My lettuce is in an open garden so definitely needs washed as it gets dirt and tree seeds stuck between the leaves. I went many seasons just letting it air dry but it would wilt. The salad spinner changed everything. I now have crisp salads that are so amazing.
Now I’ll be dreaming of garden season all night.

These look awesome! Diced roasted beets, roasted pepitas, goat cheese, a bit of olive oil, and salt has been my go to lately. Otherwise a very simple vinaigrette with whatever else you’re growing in your garden chopped in 😋
