

My giant salad i have every night for dinner. I always have it with a side of protein like fish or chicken. It has seriously helped my energy levels and brightened my skin. It's kale, peppers, tomato, celery, everything bagel seasoning, and 2 tablespoons of avocado oil.

I’d make a 5-day salad using peppers, carrots, snow peas, chopped red cabbage, celery, cherry tomato, cubed cucumber and a can of rinsed chickpeas, finished with kalamata olives, using some of their brine + lemon juice as a dressing. I’d add avacado when I’d serve it, with whatever protein I was having.
As someone who likes to eat a bunch and likes texture, this was an amazing meal-prep style shortcut to not thinking about vegetable intake or calories too hard. Love the addition of sesame seeds!
I do something similar but with tofu and sesame oil. Charred broccolini (or just normal broccoli) is a nice addition.
