  1. 600g flour

    2.5 tsp salt

    420g water

    130g starter

    1/2 cup sugar laminated in at end

    cinnamon (idk how much) laminated in at end

    slap and fold 5 mins, s&f 30 mins apart 2x, coil folds 2x 30 mins apart, BF 7 hours, laminated in sugar and cinnamon, shaped, refrigerated 12hr, baked 450f covered 25mins and uncovered 25 mins at 400f

    I can’t get into the sweet sourdough thing. When I want sweet, I make bread with commercial yeast. Today I made whole grain spelt with honey, cinnamon, raisins and walnuts. I used buttermilk and walnut oil and covered it for 20 minutes of bake time and it’s soft and delicious.
