None of these are safe. They say to deal with paraffin wax. Not a safe preservation method. Jams must use safe tested recipes and water bath processing for a shelf stable product. These recipes would only be good for fridge or freezer jam. The butter section is especially problematic with recipes that include eggs etc. the picked also call for very unsafe boiling water canning methods

Unlike other cooking, old canning recipes should not be used. That’s because canning isn’t cooking; it’s using scientifically proven methods to safely make food shelf stable. And since science moves forward and new things are discovered all the time, old recipes are often no longer considered safe.

Recipes like these are fun to read, though. I have several old Ball books including my mother’s and grandmother’s books. I just know I can’t use the recipes.

Thank you for sharing. I love looking at old recipes. All of these would be fine to make and store a few weeks in the fridge. Anchovy Butter is the best on a steak! I like to add fresh horseradish in it.
