I’m always on the hunt for new dinner recipes to try, especially when I’ve been eating the same thing for multiple nights in a row. While I appreciate consistency, I always look forward to introducing my taste buds to new recipes and flavors.
In fact, I constantly ask my friends for new recipes or scour the internet for healthy ones that keep me coming back for more. And to my surprise, a meal that piqued my interest is one that actress Julia Roberts often makes.
In a 2017 interview with People, Roberts offered readers a look at what she eats in a day. And when it came to dinner, she made a pretty simple meal that only required three main ingredients—and it has become our new go-to for weeknights.
Julia Roberts’ Favorite Dinner Is Salmon With Brown Rice and Avocado
In her interview with People, Roberts shared that her favorite dinner features wild-caught salmon paired with avocado and brown rice. The actress’s go-to dinner takes a page from the Mediterranean diet, featuring a balanced mix of protein, healthy fats, and whole grains.
The best part about this meal is that it can be zhuzhed however you like. You can rub the salmon with olive oil, salt, and pepper—or even add smoked paprika or chili powder if you enjoy a little heat with your meals. Plus, you can use any kind of rice: basmati, jasmine, wild rice, or even coconut rice, which pairs perfectly with the creamy avocado and freshly cooked seafood.
You can cold-pan sear the salmon to crisp the skin, pan-sear it in oil, or bake it in the oven with lemon slices on top. You could even pop it in your air fryer for an easy way to cook while you’re getting your rice ready and cutting up your avocado to enjoy on the side.
To complete the meal, Roberts pours herself a glass of wine to enjoy with the healthy, delicious dinner. And for dessert, the actress opts for chocolate chip cookies.
Not only is this dinner simple, but it’s also nutritious and doesn’t require much time in the kitchen, making it the perfect quick, easy weekday meal that is far from boring. When I make it, I’ll be whipping up a simple marinade with brown sugar, soy sauce, water, and vegetable oil to coat the salmon, giving it a sweet-and-savory taste I’m sure I’ll start craving once dinner time comes around.
