Damn this kinda blew up. Here’s the recipe I tried to follow.
Serves 2 Pasta & Sauce • 120g pasta if your choosing • 5 sun-dried tomatoes, chopped • 1/2 onion, diced • 2 cloves garlic, grated • 1 tbsp tomato paste • 150ml chicken stock • 80g 0% fat Greek yogurt • 50ml milk (insted od greek yogurt and milk I used coffee creamer, yes, I said it wrong before) • 10g parmesan, grated • 1 tsp oregano • 1/2 tsp chili flakes • Salt • Black pepper • Handful of spinach (added way more) • Fresh basil
I’m pretty sure I also added smoked sweet paprika and chicken diced into cubes and fried on a little bit of oil (chicken was seasoned with salt, peper, paprika and oregano)

Method 1. Dice the onion and prep the chicken if you want that. 2. Boil the pasta in salted water until al dente (about 9–10 minutes or follow the package). 3. While the pasta cooks, heat the butter (or some oil in my case) in a frying pan. Add the chicken and fry until golden brown and cooked through. Remove from the pan and keep warm (you can place it in the oven). 4. In the same pan, add the diced onion and chopped sun-dried tomatoes. Fry for 3 minutes. 5. Add the grated garlic, tomato paste, chicken stock, oregano, chili flakes, salt and black pepper. Cook for 1 minute. 6. Stir in the Greek yogurt, milk (or coffee creamer in my case), parmesan and spinach. Mix until combined and gently simmer for a couple of minutes. 7. Add a splash of pasta water if needed, then add the drained pasta and mix until combined. 8. Serve the pasta topped with the chicken. Finish with extra grated parmesan and garnish with fresh basil.
Enjoy guys! If I’ll make it again I’ll come back and edit the recipe accordingly!
