Combined with fresh baguette and some salted butter is a close tie for me. Osetra works too but isn’t necessary.
I’m just having pulpo as a very special treat once every few years though as it’s an animal a little too sentient for my liking.

Grilled is very good, but not my favourite.
Think my top 3 (in no specific order) would be:
– breaded and fried tentacles – octopus rice – *lagareiro* style octopus (oven roasted in an absolutely absurd amount of olive oil)
