


Made ramen Friday for friends and as always…. Have lots of leftover broth and noodles everywhere.
Decided to throw my Dashi Okume packet in with some frozen broth and make a simple shoyu Tare.
Leftover Sous vide chicken (Chashu marinade), Tare baked mushrooms, homemade menma and of course egg and green onions. Simple, quick and delicious. Noodles are 85% bread flour, 15% cake flour and a gram or two of wheat gluten.
