As a person raised in Hawaii, highly recommend the variation known as the chicken cutlet loco moco. Fried chicken (like katsu) instead of the hamburger and add grilled onions and mushrooms. Literally my favorite meal, if your ever on the Big Island, Hawaiian Style Cafe has the best on earth!
