Baldi Opens at Waldorf Astoria Beverly Hills, Bringing Tuscan Steakhouse Traditions to the City

Baldi, a Tuscan steakhouse led by Chef Edoardo “Edo” Baldi, opened on February 18 at the Waldorf Astoria Beverly Hills, introducing a dining concept shaped by family tradition and regional Italian cooking.

The restaurant reflects Chef Edo’s culinary roots and continues the legacy of his family’s restaurants, including Giorgio Baldi in Santa Monica and e.Baldi in Beverly Hills. At Baldi, the American steakhouse is interpreted through a Tuscan lens, with an emphasis on open-flame cooking, house-made pastas and a wine-focused dining experience.

A Steakhouse Grounded in Tuscan Cooking

The menu centres on prime and Wagyu beef, grilled over olive wood and seasoned with restraint. Cuts include USDA Prime selections sourced from ranches across the United States, as well as Australian, American and Japanese Wagyu. Each steak is served with house-made salsa verde and Italian-style tomato-based sauces.

Beyond the grill, the kitchen presents dishes rooted in regional Italian traditions. Pastas are prepared in-house and reflect recipes passed down through generations. Options include Sweet Corn Tortellini with mascarpone and truffle butter, Fettuccine with sautéed porcini, and Mezze Maniche with beef ragout.

Starters such as Burrata with cherry tomatoes and basil, Roberta’s Beef Polpettine in Tuscan tomato sauce, and The Etruscan Salad combine seasonal ingredients with straightforward preparation. Seafood offerings include Grilled Dover Sole with lemon sauce. Desserts feature Edo Baldi’s Apple Pie à la Mode and a Pancake Soufflé served with rum and strawberry sauce.

A separate bar dining menu includes thin-crust pizza, bruschetta, fried mushrooms with pecorino, sliced artichokes with fennel, and a New York Strip steak.

Cocktails and Wine with an Italian Focus

The beverage programme, led by Jim Kearns, draws on classic Italian aperitivo traditions. Cocktails include a Limone Spritz, a Bergamotto Tonica, a Negroni variation, and a Manhattan prepared with Italian liqueurs. Zero-proof options are also available.

The wine list highlights regions such as Piedmont and Tuscany, as well as selections from France and the United States. Guests will find producers of Barolo, Barbaresco, Brunello di Montalcino, and Bolgheri, in addition to Champagne and Bordeaux labels.

Designed for Gathering

Baldi seats 180 guests and includes a central bar, a semi-enclosed outdoor terrace with open-air pods and a private dining room for events of up to 50 people. A mural by Drawing Room NYC welcomes guests at the entrance, depicting an Italian dinner gathering.

Designed by Ezequiel Farca Studio, the interiors feature terracotta tones, wood, marble, leather and woven textiles. Olive trees and soft lighting create a warm, familiar setting.

Baldi is located at 9850 Wilshire Boulevard in Beverly Hills. Dinner is served Wednesday through Sunday from 5:00 p.m. to 10:00 p.m. Bar dining is available daily from 5:00 p.m. to 11:00 p.m. Reservations can be made via OpenTable, and private event inquiries are handled directly by the restaurant.
