The Binder: 1 Egg and 80g Flour.
The Pan: 2–3 tbsp Olive Oil.
The Zesty Sauce: Greek Yogurt, Dill, Basil, Parsley, Garlic, Paprika, and Lime Zest.

Step-by-Step Instructions:
1. Prep the Zucchini: Shred the zucchinis and toss them with a pinch of salt. Let them sit for 10 minutes, then squeeze out every drop of water using a clean kitchen towel. This is the secret to a crispy fritter!
2. Mix the Batter: In a large bowl, combine the squeezed zucchini, minced garlic, onion, crumbled feta, and all the fresh herbs. Add the egg, cumin, pepper, and flour. Mix until you have a thick, scoopable consistency.
