1 1/2 cups water
1/4 tsp salt
1 tsp + 1 tablespoon olive oil
1 cup couscous
Add water to saucepan, add salt and olive oil and bring to a boil. Remove from heat and add couscous. Cover for 5 minutes and fluff with a fork.

1 can (15 oz.) chickpeas, drained (reserve 3 tablespoons of the liquid) and rinsed
1/2 cups frozen peas, thawed
1 medium carrot, coarsely shredded
1 tomato, chopped
1 green, red, or yellow pepper, chopped
2 1/2 tablespoons raisins
1 1/2 pistachios or pine nuts

1 1/2 tablespoons lemon or lime juice
1/4 tsp oregano
1/4 tsp dried thyme
