Absolutely loved this recipe from the ATK Mediterranean cookbook! Page 174, Hearty Couscous, Eggplant, White Bean and Spinach. Had to buy these spices to make this, but I'm sure I'll be using them plenty more for cooking through this book!
This recipe was a little tedious, cooking ingredients in a pot, then removing, then cooking another ingredient, then removing, then adding back together.. yadayda.. it was weird. But it worked out beautifully, it tasted SO GOOD!
