
Just had the most comforting bowl of Katsudon (カツ丼) and I'm still thinking about it.
For the uninitiated: Katsudon is a donburi (rice bowl) topped with a crispy deep-fried pork cutlet (tonkatsu), softly set egg, and onion, all simmered in a sweet-savory dashi broth. The whole thing comes together in a way that's rich, silky, and deeply satisfying. This one was garnished with shredded nori and a touch of fresh herb — served alongside a bowl of steamed rice, shredded cabbage, miso soup, and tonkatsu sauce for dipping
