Try this marinate the next time you barbecue

  1. • 1 Handful Cilantro
    • 1 Handful Green Onions (roughly cut)
    • 1 Handful Garlic Cloves (Peeled)
    • 1 Red Onion (roughly cut)
    • 1 Handful Ginger (roughly cut)
    • 2 Scotch Bonnet Peppers (more if your chili ring can handle it)
    • 1 Lime (Juiced)
    • 1 Tiny Handful of Peppercorns
    • 1 Tiny Handful of Kosher Salt

    1. ⁠Blend until blended.
    2. ⁠Taste.
    3. ⁠(Optional) Add more Lime Juice to taste.

    Note: If unfamiliar with a Tiny Handful, use a toddler’s hand(preferably not disembodied) to measure.

    What do you recommend using this on? Beef? Chicken? Pork?

    That’s your standard chimichurri with a bit of extra heat. I typically don’t use it as a marinade but it’s a great topping for many steaks. I always serve it with flank.

    I used to do this at the camp I worked at, minus ginger, which I love seeing here! We called it mojo. I used to pack a lot more garlic in it than OP did. The camp kitchen had to make food pretty bland for the kids so our staff devoured the sauce. I had it in giant squeeze bottles…. until one day I used old garlic and gave three of my buddies food poisoning. Good times!

    I fuckin love my hand blender, especially for soups /stews, wet rubs and marinades, if you add some oil it can emulsify all the ingredients nicely and create a very potent + flavorful mixture.
