Signiel Seoul French restaurant STAY will invite Michelin three-star chef Yannick Aleno to hold a gala dinner on March 19. The event has been operated under the concept of wine pairing (combination) since 2024.

The main character of this event is Chateau Fabi, a representative wine in Bordeaux, France. Chateau fabi has a unique flavor by mixing grape varieties in different harvest years (vintage). In this dinner, three years of wine were carefully selected. Bang Sang Jabo Yannick Aleno Group Chief Sommelier tasted it himself and chose the wine.

There are a total of seven courses on the menu. Starting with a crispy buckwheat fry topped with caviar, broccoli and pears are added to the vegetable soup to boost your appetite. Then, langustin, a vanilla-flavored lobster dish, and gilt-bronze fillets, which are flavored with salt and spices, appear one after another.

The main dish is duck brisket with a layer of beef Korean beef and mille-feuille and herb sauce. The finish is decorated with a chocolate tart sprinkled with sweet wine sauce.

Pair the wine that matches the course here. Starting with 2009 Dom Perignon Rosé Champagne, three vintage wines, including White Wine 2023 Corton-Charlemagne and Chateau Fabi, the main character, will be available for each course.
