

2 cups of dried chickpeas soaked overnight, pressure cooked in the instant pot with enough water to cover them for 15 minutes, drained and cooled. blend with the juice of 2 lemons, a couple of cloves of garlic crushed, 3 tbsp of tahini, 2 tbsp olive oil and salt to taste. add water as needed. I was too lazy to peel the chickpeas so its a little less smooth than previous batches but I dont mind 🤣 I froze some portions in a silicone muffin tray to thaw at a later date or use for lunches ! sooo much hummus at a fraction of the cost.

To me store bought tastes like a whole different thing. I’ve had it at friends’ houses but I really don’t see the point.

Honestly store bought hummus just tastes bad as well. How is freezing hummus? I always worry I won’t like what happens to food I freeze when it thaws 😅
Hummus is way too easy to buy at the store. Just get good quality ingredients. In the Southern US Carmelia brand has the best quality beans. You can order them online. Colorado Dry Beans is great too. Tahini doesn’t vary too much in quality really. Use fresh lemons and garlic. Be careful with olive oil because it doesn’t like to be agitated too much before it gets bitter.
Isn’t a container if hummus like $2 – $3? My grocery store often has a 2 for $4 deal.
I was thinking that last night. I went to a sainsburys & thought: hold on a minute, I’m sure this hummus was cheaper last time i bought it- a few weeks ago. I didn’t buy it & went to another store where it was even more expensive than the 1st place. 25% & 35% increase respectively.
Fortunately I really like the caremalised Onion hummus Lidl make, which hasn’t gone up. It’s a wee while since i made my own, but it’s so easy there’s no reason not to

Because I love you, I will share my secrets.
My secrets are paprika and cumin. Especially cumin.
I find that giving the beans a little massage by hand while they are in the water after cooking them in the pressure cooker makes about half of the skins come off, and then they usually float.
But honestly, a good blender makes skin removal unnecessary.
How long do you cook them for? My instructions for the instapot say 40 minutes for chicken peas, but I do 44 when making hummus to get it even creamier.
I believe that one can use chick pea flour to make really smooth hummus
I use canned chick peas and sesame oil instead of tahini. I much prefer home made bc I can tweak flavors and textures
I don’t like all the seed oils and nasty ingredients with shop bought. You can create endless variations at home. I just used tinned chickpeas or the fancy Spanish ones in a jar.
I was literally just thinking about making it on my own for the first time. This is the push I needed to follow through. lol.
Yeah I’m done buying flavorless store bought hummus, even when it’s half off it just isn’t worthwhile. I just tried a recipe where you simmer canned chickpeas on the stove for about 20 min then make the hummus while they’re still warm, blended up with the usual ingredients and some roasted red pepper slices. It’s so good I take snack breaks from work just to go eat a little on a piece of pita 😂
I add a teaspoon of baking soda to the Instant Pot while the chickpeas are cooking and it helps break down the skins. It doesn’t impact the taste. (Got the idea from Nisha Vora’s “The Vegan Instant Pot Cookbook”).

Process the hummus while the chickpeas are still hot and use some cooking liquid to loosen – makes it extra creamy without skinning. No need to soak the chickpeas – just cook for about 50 min with natural release.

sub one of the lemons for like half a jar of roasted red bell pepper, it’s my favorite way to make it and is a big hit at work parties (plus i find the color slightly more appetizing but im weird)
I’ve never thought of freezing hummus. Great idea!
My husband eats it for lunch every single day. He used to buy it but over the pandemic we struggled to get the kind he liked. I’ve always enjoyed making it but he eats a LOT of it, and I wasn’t willing to do all that work for him. So he learned how to make it. He doesn’t cook much so this was kind of a big deal. He continues to make it.
We add cumin and a pinch of cayenne pepper to ours. We don’t add oil while preparing. We prefer to drizzle it on when we serve it. He uses canned chickpeas as actually cooking his own beans was a step too far for him even though I cook beans for dinner all the time. He makes a similar amount to you and easily finishes it in a few days of lunches so we have never tried freezing it. Despite the canned chickpeas, I am sure we have saved a LOT of money over the years.
I eat so much homemade hummus lol. Literally like 10 min of work if you used canned chickpeas and tastes way better than store bought

What a money saver! I’m the only one in my house who eats hummus and often find it hard to finish a store bought tub.
I’ll never go back. Not about the price but the taste. Homemade just has this whipped, light, fluffy texture store bought doesn’t have.

Why in muffin pan?
Always make my own and add about 1/3 pistachios to the amount of chickpeas. If you live near a Wegmans they have roasted hot red pepper pistachios that make the best hummus ever!
