Chickpea pasta, artichoke hearts, grape tomatoes, mushrooms, and spinach that I sautéed in olive oil with basil and oregano. Are mushrooms considered okay?

Everything is fine with your meal. I would ad a protein, even with the chickpeas pasta. Mushrooms are ok, it’s a veggie.

Sorry – didn’t know I needed to include measurements. 2 oz pasta, 2 oz spinach, 4 oz artichoke hearts, 4 oz mushrooms, 4 oz grape tomatoes, and 1 Tbsp olive oil.

mushrooms are amazing and they are my most favorite thing to add no matter what the dish. And beans. i’d add a can of rinsed black beans to this dish. It also looks like it could use more tomato for my liking, maybe add some more greens such as asparagus, green beans, broccoli, bell pepper, and/or peas. So many options to add more veggies to dishes like this but the way you prepared it is perfectly fine.

Peas would be great in this. And since some others are saying this could use more protein, peas would help with that.
One cup of peas has about 9 grams of protein. It also has about 9 grams of fiber.
