Ingredients

Bone-in, skin-on chicken thighs and drumsticks (about 2½–3 pounds)
2–3 tablespoons extra virgin olive oil
1 large onion, thinly sliced
4 garlic cloves, minced
14 ounces diced tomatoes
2 tablespoons tomato paste
½ cup water or chicken stock
1 teaspoon dried oregano
½ teaspoon dried thyme (optional)
Salt, to taste
Freshly ground black pepper
1 lemon, sliced
Fresh parsley, finely chopped
Instructions
Preheat the oven to 400°F (200°C).

Pat the chicken dry with paper towels and season generously with salt and black pepper.

Heat the olive oil in a large oven-safe pan over medium heat. Place the chicken skin-side down and sear until golden. Flip briefly, then transfer the chicken to a plate.

In the same pan, add the sliced onions and cook until soft and lightly golden. Stir in the garlic and cook until fragrant.

Add the diced tomatoes, tomato paste, water or stock, oregano, thyme, salt, and black pepper. Stir well and simmer for 5–8 minutes until the sauce slightly thickens.

Return the chicken to the pan, nestling it into the sauce with the skin-side facing up. Arrange the lemon slices around the chicken.

Transfer the pan to the oven and bake uncovered for 35–45 minutes, or until the chicken is fully cooked and tender.

Garnish with fresh parsley and serve warm with crusty bread, rice, or roasted potatoes.

Notes
Bone-in chicken produces the best flavor and keeps the meat juicy. The sauce will naturally deepen as the chicken bakes.

If you prefer, boneless chicken thighs may be used, but the cooking time will be shorter.

This dish reheats beautifully and tastes even better the next day.

Serving Suggestions

Serve this Mediterranean Chicken Plaki family-style with warm crusty bread to soak up the rich tomato and olive oil sauce. A simple rice pilaf or orzo makes a perfect base, while roasted lemon potatoes beautifully complement the bright citrus flavors of the dish.

For a classic Greek table, pair with a fresh Greek village salad (Horiatiki), steamed vegetables dressed with olive oil and lemon, or even gigantes plaki for a comforting, traditional spread. This dish is especially wonderful when placed at the center of the table and shared.

Filoxenia Hosting Tip
This dish is ideal for effortless entertaining. You can prepare the tomato and onion sauce ahead of time and refrigerate it, then simply nestle the chicken into the sauce and bake before guests arrive. As it cooks, your kitchen will fill with the most inviting Mediterranean aromas — one of the simplest ways to make your home feel warm and welcoming.

Serve directly from the baking dish with plenty of crusty bread and a simple salad for a relaxed, family-style meal your guests will remember.
