    Why are they not ravioli? Tortellini are sealed into a ring, right? I acknowledge I have lost a lot of Italian, but I don’t think I’ve ever seen the square sealed pasta with zig-zag edges called anything but ravioli

    Our family emigrated from Piemonte and our cheese ravioli have an almost identical filling and look just like yours. Of course, who knows how names evolved over the last century in different places.
