These are lamb racks! And we roast a whole lamb in my old and new country, you don’t need to slice it while roasting, when properly done, the meat will basically fall off the bone!

I guess technically this is a lamb on a rack.

That is gigot d’agneau (leg), not carré d’agneau (rack).
