Yes I know my dinner is a disaster I just used what was left over but I realised I can't thrive that way in terms of health. Feel free to laugh all you want at what a disaster I am at meals😁

Honestly I’m right there with you with meals like this! A lot of the time I pick a grain, a legume and various veggies and that’s my meal. Today for lunch I had half of a sweet potato, black beans, green beans, kale, and broccolini. I drizzled some tahini over it and that was lunch.
For dinner I’m having a curry with a random assortment of veggies- the only thing that makes it a curry is the sauce! I’ve got lentils, cauliflower, sweet potato, spinach, carrots, mushrooms… it looks like a mess but it is a 10/10 meal for me.

I don’t see a disaster here! That looks like a great mix of nutrients, protein and fiber. If it’s missing anything at all it might be some healthy fats–add a dressing, sauce, or some nuts. What would you like help with?
You fed yourself nutritious food. There’s nothing wrong with that or with using up what you have. Food is very expensive.

Just needs a good sauce. I like making a simple one with tahini, lemon juice, lemon pepper, and garlic salt. Thin with water to the thickness you want and boom makes your plate a whole lot more palatable.

I’m seeing beans, carrots, brocille and red peppers.
This is what you do next time.
Cube the carrots and roast at 350 to 500 with light oil and salt along with the brocile.
If you don’t want to roast, saute the carrots and don’t add brocile till the end.

Add the bell pepper and then brocoli. After that move it to a bowl.
Add the rice into the same pan, pot or wok. No soy sauce no problem. Im not going to tell you what not to use that I don’t see but at the bare min I expect you to have salt and sugar. on the side, mix salt and water until its as salty as the sea. Then move the rice back and forth and slowly drop the water into the pan to season the rice with salt.
You CAN add salt directly to rice but I personally like using the water. Honestly, I add rice when im cooking it, but if im not baking fried tofu I can’t do that because I like to control the salt lvl of my food with other things like soy and other flavorings.
Toss and taste toss and taste.
TURN OFF THE EAT, after you get your rice to the point you want it. Then toss in your vegetables and just stir it in. You’re not cooking at this point. Just mixing. Mix it in the pot because it’s bigger than the bowl. That helps a lot.
If you really want to eat the beans with this, don’t mix the vegetables. Have it on one side, the rice in the middle, then add the bean to a pot, add coconut milk, seasonings of choice (just salt is okay) and cook it until it gets a curry like thickness and add it to the other side. I dated a Colombian woman when I was broke broke and she taught me how to fucking eat by doing this when I had no money.
im just now seeing cabbage. can’t help you with that. I never liked cabbage. Just tastes like water unless its kimchi

You need a sauce. One I tried recently was sesame oil, tahini, maple syrup, soy sauce, grated ginger & garlic, wee bit of water to make it go further. Don’t even ask me what measurements I used. I start with a wee bit of everything & add as seems fit. I think it would go well with what you’ve got there, if you haven’t got all these I’d still go with a pick n mix of what I started with

How is that a disaster? It looks great! I would grab a large tortilla, toss some of that in it and top it with avocados/gauc, some pico de gallo and/or hot sauce and chow that thing down!
