Let me start by saying, I love this sub and although it took me a while to get over my doubts of what were being made and shown, I finally did it.

I honestly thought these dudes were going to burn but wife and I were extremely pleased with the first pass and will do this forever. Here’s my general op:

5# of fresh wings patted dry. I left the tips on, next time will cut.

Mixed 2 tbsp corn starch, 1 tbs baking powder, 1 tsp salt. Tossed chicken, laid on rack and let fridge dry for overnight

Next day, heat convection oven to 450*. Cooked for an hour, turning all pieces over every 20 minutes. Each picture above was taken from the 0 minute mark and then every 20 after

Tossed an in a bit of avocado oil and used dry rub find from HeyGrillHey

Honestly – so happy and pleased with how crispy and juicy they came out. Will try maybe a slightly shorter cooking time and larger wings next time, also with a wet sauce

Does it have a crisp? And whenever I’ve used corn starch or baking soda, it has almost a cakey residue texture. Did you have any problems with that?

  3. They look great! When I do the whole wing this way, I dislocate the joint between the flat and the drumette to maximize crispy skin.

I’d happily eat them 3 or 4 nights a week if my family was in line with my thinking!

Whole wings are superior to any other way.
