Golden, crispy sambousik made with a soft, easy homemade dough. I’m sharing two classic fillings: traditional 7ashwi meat and a rich three-cheese blend. Perfect for Ramadan, gatherings, or freezing for later
🔸 Dough Ingredients
• 6 cups all-purpose flour
• 1 tbsp salt
• 5 tbsp cornflour
• 1 tbsp baking powder
• 1/2 cup ghee or ½ cup oil
• 2½ cups water (adjust slightly if needed)
🔸 Meat Filling (7ashwi)
• 500g minced meat
• 500g onion, very finely chopped
• Salt and pepper to taste
• Pine nuts (optional)
• Chopped parsley (optional)
🔸 Cheese Filling
• 400g Akkawi cheese (or any semi-soft cheese like fetta)
• 400g Kashkawan cheese
• 400g mozzarella
• 2 tbsp nigella seeds
• Optional: chopped parsley or jalapeños.
