Ingredients (No-Bake Kunafa Nut Rolls):
For Nut Filling:
Almonds – 1 cup (chopped)
Cashews – 1/4 cup (chopped)
Walnuts – 1/4 cup (chopped)
Pistachios – 1/4 cup (chopped)
Honey – 2 tbsp
For Kunafa Vermicelli Layer:
Roasted Vermicelli – 1 packet (approx. 130 g)
Butter – 2 tsp
Condensed Milk – 120 g (about 1/3–1/2 cup)
Cardamom Powder – 1 tsp
For Coating:
Poppy Seeds (Khus Khus) – 2 tbsp

No-Bake Kunafa Style Nut Roll
1️⃣ Prepare the Nut Filling
1. Lightly dry roast chopped almonds, cashews, walnuts, and pistachios until fragrant.
2. Add honey and mix well to form a sticky nut mixture.
3. Transfer the mixture onto parchment paper and press firmly.
4. Shape into a tight log or cylinder, pressing well so the nuts stick together.
5. Wrap tightly and freeze for 10 minutes to firm up.
2️⃣ Make the Kunafa Vermicelli Base
6. Slightly crush the roasted vermicelli with your hands.
7. Heat butter in a pan on low flame.
8. Add vermicelli and roast until crisp and fragrant (be careful not to burn).
9. Add condensed milk and cardamom powder.
10. Mix well and cook on low flame until it forms a soft, sticky dough-like mixture.
(Cook until moisture reduces and it holds shape.)
3️⃣ Flatten the Vermicelli Layer
11. Transfer the warm vermicelli mixture onto butter paper or a greased surface.
12. Cover with another sheet if needed.
13. Flatten into an even rectangle using your hands or a rolling pin.
4️⃣ Assemble the Kunafa Nut Roll
14. Place the chilled nut log at one end or in the center of the vermicelli sheet.
15. Roll tightly to completely cover the nut filling.
16. Seal the edges properly and smooth the surface gently.
17. Chill again for about 10 minutes so it sets firmly.
5️⃣ Coat, Slice & Serve
18. Dry roast poppy seeds until they just begin to crackle. Let them cool slightly.
19. Roll the prepared kunafa log in the roasted poppy seeds to coat evenly.
20. Slice into bite-sized rounds using a sharp knife.
21. Serve immediately or store in an airtight container.
