
Toasted wheat bolillos with one half feta, sun-dried tomato vinaigrette, Kalamata olives, and spinach, and the other half is feta, honey, and strawberries. Tomato medley and two boiled eggs on the side.
Trying to keep it light, as this will probably be my breakfast most days and I’m never hungry in the morning. What can I do to improve this dish?

I’d switch the croissant for sourdough bread. This looks like a great plate.
it’s fine depending on your needs and situation. it would not be a good fit for myself, as i try to limit my egg intake. It also seems like a lot of food but again depends on your body. i would love to try a bolillo..
I would look at the roll nutrition. If it’s low fiber and has added sugar I’d switch the roll for something with more whole grains and fiber like Ezekiel bread. If you’re on the diet to lower your bad cholesterol I would remove one of the yolks and try to keep it to a yolk a day. Egg whites are fine.
Don’t subtract too much or the foods you enjoy all at once. Or else it’ll feel like punishment.
