½ cup chopped pecans
Procedure
In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth and glossy.
Whisk in mashed banana, egg yolk, and vanilla until fully emulsified.
In a separate bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
Fold dry ingredients into wet just until combined. Do not overmix. Dough will be soft but should hold shape.
Cover and chill the whole dough for 30–45 minutes.
Scoop with 1oz disher. Do not flatten.
Bake
350°F for 12–14 minutes

Yum, that sounds amazing! Soft, chewy banana bread flavor in cookie form is basically dessert perfection. I can already imagine the sweet banana aroma mixed with a little brown sugar and maybe even some chocolate chips or nuts.
