What I admire about Mr. Pepin’s videos is the no-nonsense productions. Just great informative instructions and demonstrations without the fancy fluff productions of so many others. Love it.

While I am a fan of Jacques Pepin, I would have to say this is not an authentic way to make Japanese Ramen.
Traditional Japanese Ramen soup is made from boiling pork bones and marrow, and serve with noodles and slice of cha-shu (Japanese BBQ pork).
At best, Jacques Pepin was making a pot of Chinese soup noodles.😂

Chef, you’ve taught me more about how I cook than just about anyone and have shaped American cooking and food in ways that are beyond description. Bravo and thank you. I will just say, this isn’t really ramen. This is a ‘Asian-ish’ veggie shrimp soup with ramen noodles.Ramen— real ramen, as a culinary idea, derived from china is what it is as we know it today is a Japanese soup whose principal element is its exquisite broth, its seasoning (tare) and the aromatic fat. Those elements are what real ramen riffs on. Those eggs also need a soy mirin soak. But I bet this soup was delicious as well.

looks awful. this is just some weird vegetable soup with noodles. ramen is a heart meat-based broth that is simmered for like 20+ hours
