I think I finally nailed BF and my oven spring! So exciting. Every other loaf I did didn’t come out good. What do you think?

    Recipe:

    100g starter 1:2:2 night before
    300g water
    10g salt
    450g bread flour

    Mixed starter and water and salt
    Added flour
    Combined well till cohesive dough
    3 stretch and folds 30 min apart
    BF for just about 8 hours on counter ~ 70 degrees F
    Over night in fridge
    Baked next morning, right from fridge into 450 degree preheated Dutch oven for 30min with lid on and 425 for 20 minutes with lid off. Let it rest an hour and a half… couldn’t wait to see crumb!
