
Back in 2024, I got married and honeymooned for about a month in Japan. It was amazing but it kind of ruined ramen in the US for me, so I rarely have it anymore. recently, i accidentally made some that was SO good and revived my appetite for ramen completely! the plating isn’t great because i only took the photo to send to my MIL (we were talking about having ramen due to a cold wave —prime ramen weather— and i decided to make some at like 9pm when i realized I just so happened to have everything on hand to make some ramen). i referenced a few online recipes for spicy miso broths and just freestyled until i realized i made liquid GOLD. It was so delicious and now im not sure if ill ever be able to recreate it (but if i do, ill make another post lol)
Broth: homemade spicy miso
noodles: dehydrated hand pulled ramen noodles
toppings: leftover roast pork, baby bok choy, tofu, bean sprouts, soft boiled egg, and some green onions

Looks pretty tasty. The broth has a good texture. And the eggs have that *just right* runny consistency. But I’ve never seen tofu in ramen before.
So long as you enjoyed it, that’s the main thing.
