
Not the prettiest dish, but it was really tasty and filling! Made a ton of food. Picture was taken after two adults and one toddler had multiple servings.
I had a little under a pound of ground beef leftover from previous meals that needed to be used up today, and not much to make with it so I decided to use up some of my lentil stash.
We needed something hearty that would have lots of leftovers to get us through for a couple days and this definitely did the trick! I wish I had more curry powder, but was out of the main one I like to use (madras curry powder), so I used a mix of some small sampling tins I had gotten from a gift set last Christmas. It ended up being really tasty regardless!
With dishes like this it's easy to season however you like, I tasted as I went and added more of different things here and there. Didn't measure but I guestimated for the recipe the best I could remember. I served it with white rice.
Ingredients:
One pound ground beef
One pound lentils
Two small white potatoes, coarsely chopped
One large sweet potato, coarsely chopped
4 large carrots, coarsely chopped
One large onion, chopped
2 inches of ginger, minced
Two small tomatos, coarsely chopped
3 bay leaves
4 cloves garlic, minced
4 cups chicken stock
3 cups water
1 Tablespoon ground ginger
1 Tablespoon tandoori masala powder
1 Tablespoon garam masala powder
1/2 teaspoon red pepper flakes
1-2 teaspoons garlic powder
1 teaspoon black pepper
1/2 teaspoon cumin
1 teaspoon sugar
A pinch or two of cinnamon
Instructions:
heat neutral oil in big heavy duty pot over medium high. Add onions, garlic, ginger, and bay leaves. Fry for a minute or two then add all seasonings. Fry for a minute or two and enjoy the smells.
Add ground beef and brown.
Add all veggies and stir fry em for a few minutes
Add chicken stock and water, bring to soft boil.
Add lentils and gently simmer, cover but leave pot lid slightly ajar.
Simmer for 20-30 minutes until lentils and veggies are softened to your liking
Serve with white rice.
