Ingredients
For Pork Chops and Apples:
906g/ 3-4 pork chops (bone-in)
28g/ 2 tbsp vegetable or neutral-flavored oil
28g/ 2 tbsp. unsalted butter
1-2 apples, diced (Honeycrisp or Fuji work well)
90g/1 small onion, diced
42g/ 3 tbsp Maple syrup
14g/ 1tbsp Dijon mustard
4g/ 1 tsp. apple cider vinegar
2g/ ½ tsp cinnamon
2g/ ½ allspice
2g/ ½ tsp paprika
Salt n Pepper to taste
Spiced Sweet Potatoes puree:
2-3 large Sweet Potatoes
14g/ 1tbsp olive oil
2g/ ½ tsp. cumin
2g/ ½ tsp chili powder
2g/ ½ tsp. cinnamon
Salt and Pepper to taste

Instructions:
Prepare the Sweet Potato Puree:
Preheat oven to 400°F (200°C).
Poke sweet potatoes with a fork as this allow the steam to escape while they are cooking.
Place the sweet potatoes on the prepared tray and bake@ 400F/200C for 55 minutes (ovens vary), or until they are very tender/soft when pierced with a fork.
Cut sweet potatoes half lengthwise and allow them to cool.
Scoop out the soft interior into a bowl, discarding the skins.
Transfer the sweet potato to a blender or food processor.
Add the olive oil, cumin, chili powder, and cinnamon.
Blend for a smooth, velvety consistency. Blend until creamy.
Add the salt and pepper to taste and blend.
Transfer to a bowl, set aside, keep warm until ready to serve.

Prepare the Pork Chops:
Pat pork chops dry and season generously with salt, pepper, and smoked paprika.
Heat the oil in a large skillet over medium heat.
Sear pork chops for 3–4 minutes per side until golden brown (145F/63C internal temperature to doneness). Remove and set aside.
Make the Maple Apple Glaze:
In the same skillet, over medium heat, and add butter.
Add diced onion; sauté for 4–5 minutes until softened.
Add diced apples and sauté for 4-5 minutes until softened.
Stir in maple syrup, Dijon mustard, apple cider vinegar, cinnamon, and allspice.
Return pork chops to the skillet, spooning the glazed apples over them.
Cover and simmer for 5–7 minutes until the sauce thickens slightly.
Serve:
Allow pork chops to rest in the pan before plating.
Arrange each plate with a pork chop topped with maple-glazed apples. Add a serving of spiced sweet potato puree.. Garnish with fresh chopped parsley for a fragrant finish.
