I love making chicken soup like this. Except due to salt intolerance, I have to make a stock beforehand. I get creative with flavours and spices and NO ONE has ever yet told me its not salted. Caramelized onions help a lot. DREW, you would LOVE a pressure multi cooker. In 35 mins you have your 6 hr soup. or chilli. Once u try it you will get addicted. You can freakin bake in a pressure cooker. It even makes yogurt! cheese, your homemade chicken stock or veggie or beef stock in 28-35mins.

My go to dish lately has been something that is sort of a chicken noodle soup. I make a chicken and sausage gumbo that also has a lot of spicy peppery notes and for the noodles I always use Angel hair
I've found turkey legs have a better flavor than chicken. And I always make my own noodles, big wide noodles and a little thick. Very soul warming soup. ❤
