Smoked at 275F for around 2.5 hours and braised in beef tallow for another 3.5 hours. Drained and put back in the smoker for another 14 minutes to tighten up the bark.

Sandwich is toasted sesame bun, the shredded oxtail, Wickles pickles and jalapeños, and some Kinder’s hickory brown sugar bbq sauce.

    The first one I’m like “PERFECT!” Then I swipe to the second picture and I’m like “oh shet it’s got pickles (edit: and jalapenos) on it now! *NOW* it’s perfect!” Then I swipe to the third pic and I’m like “good golly Miss Molly! Now there’s a fat drizzle of that Slapass Sauce too?!?! Ok. *THAT’S* PERFECT!!”

    I’m just glad there isn’t a 4th picture or else it’d be too much teasing for my stomach and brain to take!! Great job!!
