Iβve had much worse than thisβ¦ usually holes in the middle of the pizza but mostly my fault for letting the pizza get so thin before topping and launching.
That always happened to me no matter how much flour or cornmeal I used. I use parchment paper now. When I used my regular over I just tore off a sheet and put the pizza in paper and all. Now that I have a pizza oven I cut a round circle the size my dough will be becasue Im afraid it might catch on fire if the edges are exposed. So far so good

I always put semolina under my peel, and try to wiggle it before puting it in the oven to see if it slide or stick

Always make sure the counter is dry around the pizza.
Always make sure the peel is dry, and possibly dusted with flour if you are having issues.
I suggest before going in the oven, if you have any doubt it will come off the peel, give it a little jiggle, if you see the pizza is anchored in one spot you can lift it and dust the peel, a good way is also to dust the counter evenly and dropping the pizza on the counter again to get a nice coating of flour under it, then pick it up again, live and learn.

Everyone experiences that. I learned to dip my dough in semolina flour before stretching it. I dust the peel with a little bit, as well, and it never sticks anymore.

We’ve all read this chapter! I avoid this by using durum wheat semolina. But if you use too much, it burns from the bottom. Practice makes perfect.

Are you using Semolina on the peel? If you’re not, you should. I’ve never had a failure since using it.

I learned this lesson real quick. If you think you’re using enough flour or in my case semolina then you probably need to triple the amount.
