Improvised Mediterranean stew.

I used a bunch of canned stuff I had.

1) 2 diced onions (sautéed in olive oil until soft and fragrant)

2) 3 cloves garlic (added just before I finished the onions)

3) 1 lb Italian sausage, browned and crumbled (I know that’s not strictly med, but it’s just over 1 oz per serving, so not much)

4) 6×14.5 oz cans chickpeas, drained and rinsed

5) 2×28 oz + 1×14.( oz cans diced tomatoes

6) 1 can of artichoke hearts

7) bay leaf, s/p to taste, and paprika to taste.

Slow cooker on high for 4 hours. Finished with some lime juice.
