This was SO good. Even my kids who are very picky and not vegan loved it. I used: russet potatoes, tomatoes, mushrooms, zucchini, onion, red pepper, carrots, celery, canned chickpeas and vegetable broth, italian seasoning, and coconut aminos. It was so flavorful and delicious! And extremely easy!

    I made some vegan pumpkin cornbread last week for a chili and I had some of that with this! My son had a piece of sourdough toast. But I think avocado would be really good! I may do that tomorrow for lunch!
