  2. Nothing to write home about. Hope it was good, but this feels more like trying to show off when it’s nothing special.

    Let that meat rest! You’re gonna dry that thing out. After all that patience, wait 10 more minutes for the meat to redistribute those juices and the muscle to relax.

    You’ll also find it’s more tender if you cut it *across* the grain of the muscle tissue.
