After my questions regarding kansui I said I'd post the results. Ended up getting potassium carbonate and sodium carbonate and mixed my own. Definitely the longest cook I've done and sourcing everything was a bit of a chore. Next time will be easier/ faster.

End result: Tonkotsu ramen. It was awesome.

    That broth looks insanely rich, you can tell it took hours. Mixing your own kansui is dedication on another level.
