So I bought a pack of Zucchini 'Golden' seeds that I plan on growing a bit later in the year along with a normal Zucchini pack and I wanted to see if there were any fresh canning recipes I could use to preserve them for cooking. I use Zucchini in a skillet recipe that I absolutely love and it calls for fresh cubed Zucchini normally.

    I have never seen a recipe for canned zucchini because as a low acid food, they would need to be pressure canned and would turn to mush.

    There are recipes for pickled zucchini and summer squash that only need minimal processing.

    I am intrigued by these golden zucchini though.

    Unfortunately zucchini, along with a handful of other veggies, just don’t handle the heat and cook times and turn into something unpalatable. They do dehydrated well and can be frozen with some success.

    That being said there’re is a faux pineapple recipe that uses zucchini and a couple jam, relish, and pickle recipes out there.

    Creative Canning has a decent article about canning & preserving zucchini. That website isn’t a safe source for this sub reddit but she links to recipes on the ball, Bernardino, NCHFP, and Healthy Canning websites which are safe. She did have a few untested links in there so just make sure it’s a safe source. But it should be easy to Google – again Im just recommending using her article to link to safe tested sources.
