INGREDIENTS
4 (6-ounce) salmon fillets, skin removed
1 (8-ounce) block feta cheese
1 cup cherry tomatoes
3 tablespoons olive oil
2 teaspoons oregano
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
5 ounces fresh baby spinach
8 ounces penne pasta, cooked al dente
INSTRUCTIONS
1. Preheat the oven to 400°F.
2. Add the feta, cherry tomatoes and salmon to a 9×13 baking dish. Drizzle with olive oil, add the oregano, garlic powder, salt and pepper.
3. Bake for 20-25 minutes, until the salmon is cooked through and flakes easily with a fork and the tomatoes have burst.
4. Remove from the oven and add the spinach directly to the hot dish. Let it sit for 2–3 minutes to wilt.
5. Use a fork to gently flake the salmon and mash the feta and tomatoes together until creamy. Stir everything together to create a sauce.
6. Add the cooked penne and toss until fully coated. If needed, add 2–3 tablespoons reserved pasta water to loosen the sauce.

  1. I hate salmon but this made me want to give it a second try! Wonderful presentation! The baby tomatoes look so yummy!

  2. Imo this sucks, but could have been great if u just mixed the pasta tomato and feta and only then after put the salmon on top instead of mixing everything.
