  1. I like to smoke an eye round roast to 119 internal. At that point you can slice off some thin steaks and then save the rest for the next day… slice it down into small slivers and throw it in a pan with peppers/onions to make cheesesteaks. I do mine in a low carb wrap.

  4. Tuna steak is the only acceptable substitute for steak. Great choice to throw in every once in a while. I do the same at my house, and I grew up raising cattle in rural Texas!

  5. I looked up the definition in the CIA text book and steak is anything that comes from the fleshy part of an animal. Ex pork has a ham steak, tuna steak, venison steak, etc etc. If it has flesh and is cut right, it's a steak.
