🌙 Ramadan continues.
Fish Tagine
🥣 Foundation
Fish (boneless white fish)
Potatoes
Carrots
Onions
Spring onion
Tomatoes
🌿 Spice Mix (blend together)
Olive oil
Anchovies (canned anchovies)
Garlic
Fresh cilantro
Ginger
Turmeric
Paprika
Cumin
Black pepper
Fresh lemon juice
Smoked red pepper
Salt Note:
No added salt in this recipe. The canned anchovies are already very salty, and for my version, they were more than enough. If needed, adjust to your own taste — but taste first.
(For the smoked red pepper: place one whole red pepper directly over the flame until fully charred on all sides. Once blackened, cover it or seal it in a plastic bag and let it rest — this makes it easier to peel. Peel it gently with your fingers. Do not use water while peeling; rinsing it under the sink will remove the smoky flavor. Simply remove the skin by hand, then wash your hands afterward.)
A Quiet Reflection:
Sometimes restraint is the real seasoning.
Not everything needs more — some flavors are already enough.
Cook slowly. Eat intentionally.
