
Im am starting a pizza pop up out of my home and Im looking for a spiral mixer. I have seen alot of the options out there. I want something with a large capacity, ideally 15 Quarts, but 10 would be acceptable. I would like to know if there are an mixers you good people recommend and why. Thank you in advance.

Avancini make some solid mixers but they can be kinda pricey depending on how serious you are about your popup business
Can someone help me understand this whole leaf of basil thing? Most bites won’t get any basil, and five will get an entire leaf.
Why is it not customary to cut or tear the basil so it can rbbe evenly distributed? It’s objectively superior

I’ve been using mine for around a decade now, with the usual pizza dough being a 1kg bag of Caputo #00 – it can probably fit two bags. One bag with ~65% hydration yields around 4x 15-16″ doughballs. It also powers through bagel dough, which is less hydrated and generally ‘rougher’ on mixers (*cough* majority of current pretty-but-not-so-great IMO KitchenAid ‘Artisans’) with enough dough for 18 ‘big’/normal NY style bagels (net a bit over 2kg of dough).
Other than that, you’ll get into the several thousand dollar range quickly. You might be able to find a used machine on the usual places- FB Marketplace, craigslist, etc.
You look at Famag mixers or Sunmix? I have the ooni love it but not suitable for commercial use only the home baker.
I strongly suggest trawling restaurant supply/surplus places. My local one often has mid-sized, professional grade mixers for a fraction of what they cost new, and they honestly kinda suck price wise compared to what I’ve seen in other cities. I’m not sure any of them have been spiral rather than planetary, but you might get lucky, and planetary would probably do what you want anyway.

The thing is an absolute beast, and I have had zero issues so far.

I have had this model for over a year and it’s great.. But I wish I had gotten the bigger one so if you’re looking for a 15qt mixer highly recommend getting this one.
I’ve been learning over my 1.5 year pizza pop up journey that getting a size up or a more powerful tool is always a good bet.
